Method:
1. Cut the tofu into 1-inch pieces. Mix together soy sauce and sesame oil and marinate the tofu in this mixture for 10 minutes. |

2. Fry the tofu in a frying pan over medium heat until golden brown (7-10 minutes). | |
3. Cut the cucumber and capsicums into long strips. | |
4. Prepare the avocado dip. Mash the avocado in a deep bowl, add lemon juice, chopped garlic, tahini paste, pepper and salt. Stir until smooth. |

5. Assemble each tortilla in layers: avocado dip, spinach, fresh vegetables, tofu. Sprinkle with fresh parsley and sesame seeds |
