Ingredients:

Tofu Wraps:

Avocado dip:

  • A handful of spinach leaves
  • 1 cucumber
  • 2 capsicums
  • fresh parsley
  • 1 bar of tofu
  • 1 tablespoon of soy sauce
  • 1 tablespoon of sesame oil
  • sesame seeds for sprinkling
  • 4 large tortillas
  • 1 avocado
  • 1 lemon 
  • 2 tablespoons of tahini paste
  • 1 clove of garlic
  • 1/2 teaspoon of sea salt
  • Freshly ground black pepper to taste

1. Cut the tofu into 1-inch pieces. Mix together soy sauce and sesame oil and marinate the tofu in this mixture for 10 minutes.

Fresh veggie wraps with tofu (4).jpg 2. Fry the tofu in a frying pan over medium heat until golden brown (7-10 minutes).

4. Prepare the avocado dip. Mash the avocado in a deep bowl, add lemon juice, chopped garlic, tahini paste, pepper and salt. Stir until smooth.

5. Assemble each tortilla in layers: avocado dip, spinach, fresh vegetables, tofu. Sprinkle with fresh parsley and sesame seeds
