Method:
1. Boil and peel the prawns. Roll them in paprika and fry them quickly over high heat (one minute on each side). |

2. Put all the ingredients for the sauce except starch in a saucepan, bring to a boil and reduce the heat to medium-low.
Pour a couple of tablespoons of sauce into a small bowl, add starch and mix well, you should not have lumps!
Pour the starch mixture back into the saucepan. Simmer the sauce on the stove for a few more minutes, stirring constantly, until it thickens, then remove it from the heat. |

3. Cut the cucumber and carrot into strips, and the avocado into slices. | |
4. Assemble the bowl. Put the prawns, spinach, avocado, cucumber and carrot, green peas on the quinoa. Sprinkle with coriander, and pour over the sauce. |
