Method:
1. Preheat the oven to 200 °C. Cut the lemon into quarters and place it inside the chicken. Fasten the chicken legs with cooking twine and lightly rub the chicken with salt. Leave it while you prepare the glaze. |

2. In a small saucepan, melt the butter and add all the ingredients for the glaze. Cook stirring on low heat for a few minutes, then remove from heat. | |
3. Place the chicken in a small baking tray, brush with a small amount of glaze (1-2 tablespoons) and place in the oven. | |
4. Bake the whole chicken for 1-1.5 hours, smearing it with the glaze every 20 minutes. Half an hour before it is ready, add carrots, onions and garlic to the baking dish. Add salt and pepper to the vegetables, put the cubes of butter on top. Bake until the vegetables are soft and the chicken is cooked thoroughly, all the way through. |

5. To check that the Chicken is cooked you can use one of these methods: Use a meat thermometer - this is the most reliable method. Insert the thermometer at the centre of the thickest part of the piece that's being cooked. When the temperature has reached 75°C the meat is fully cooked. Use a skewer - pierce into the thickest part of the chicken and remove the skewer. If the juice that comes out is pink it is not cooked (contains blood). If the juice is clear, it is cooked. |
